Pumpkin Donut Holes
  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • ½ cup pumpkin puree
  • ¼ cup granulated sugar
  • 2 tablespoons brown sugar
  • 1 large egg
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
Cinnamon Sugar Coating
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter melted

Method
 

  1. Preheat the oven to 350°F and lightly grease a mini muffin pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In a separate bowl, whisk together pumpkin puree, granulated sugar, brown sugar, egg, melted butter, vanilla, and milk until smooth.
  4. Add the dry ingredients to the pumpkin mixture.
  5. Stir gently just until combined. Do not overmix.
  6. Spoon the batter into the prepared mini muffin pan, filling each cavity about ¾ full.
  7. Bake for 10–12 minutes, or until the donut holes are puffed and a toothpick inserted in the center comes out clean.
  8. While they bake, combine the sugar and cinnamon in a small bowl.
  9. Allow the baked donut holes to cool slightly until they're comfortable to handle.
  10. Lightly brush each donut hole with melted butter.
  11. Immediately roll each one in the cinnamon sugar until evenly coated.
  12. Serve warm.

Notes

Use pure pumpkin puree, not pumpkin pie filling.
Don't overmix the batter after adding the flour.
Spoons or a small cookie scoop can help portion the batter evenly.
Coat the donut holes while they're still slightly warm so the cinnamon sugar sticks well.
Check them early because oven temperatures and pan sizes can vary.
For extra pumpkin spice flavor, replace the individual spices with about 1 teaspoon pumpkin pie spice.
