- Preheat oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper.
- Mash the bananas in a large bowl until mostly smooth.
- Add melted butter, sugar, eggs, vanilla, and sour cream or Greek yogurt. Whisk until well combined.
- Add flour, baking soda, salt, and cinnamon.
- Gently stir just until the flour is incorporated. Do not overmix.
- Fold in chocolate chips or chopped nuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- If the top browns too quickly, loosely cover it with foil during the final part of baking.
- Cool in the pan for 10–15 minutes, then transfer to a wire rack.
- Let cool before slicing and serving.
Notes
Use very ripe bananas with plenty of brown spots for the best flavor and moisture.
Measure flour carefully to avoid a dense loaf.
Don't overmix once the flour is added.
Baking time may vary depending on your oven and loaf pan.
Allow the bread to cool before slicing for the cleanest pieces.
Frozen bananas can be used after completely thawing and draining excess liquid.
