Ingredients
  

  • 4 slices sourdough bread
  • 6 ounces Brie cheese sliced
  • ½ cup fresh blueberries
  • 2 tablespoons blueberry preserves
  • 2 tablespoons unsalted butter softened
  • 1 teaspoon fresh thyme leaves optional
  • 1 teaspoon honey optional
  • Pinch of flaky sea salt optional, for serving

Method
 

  1. Spread the softened butter evenly on one side of each slice of bread.
  2. Place two slices of bread butter-side down on a cutting board.
  3. Spread 1 tablespoon of blueberry preserves over each slice.
  4. Layer the sliced Brie evenly over the preserves.
  5. Sprinkle the fresh blueberries over the Brie.
  6. Add fresh thyme leaves and drizzle with honey if using.
  7. Top with the remaining bread slices, butter-side facing up.
  8. Heat a large skillet over medium-low heat.
  9. Cook the sandwiches for 3–4 minutes until the bread is golden brown and crisp.
  10. Carefully flip the sandwiches and cook for another 3–4 minutes, until the second side is golden and the Brie has fully melted.
  11. Transfer to a cutting board and let the sandwiches rest for 1 minute.
  12. Slice in half and serve immediately.

  • Cook over medium-low heat to allow the Brie to melt without burning the bread.
  • Fresh blueberries provide the best texture and flavor.
  • Brie rind is edible and melts beautifully, so there's no need to remove it.
