Method
- Preheat the oven to 375°F (190°C).
- Pat the chicken breasts dry. Carefully cut a pocket into the thickest part of each breast, making sure not to cut completely through.
- Season both the inside and outside of the chicken with salt, pepper, paprika, and minced garlic.
- Fill each chicken breast with Brie slices, apple slices, and fresh thyme.
- Secure the opening with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the stuffed chicken for 2–3 minutes per side, until golden brown.
- Transfer the skillet to the oven and bake for 18–25 minutes, or until the chicken reaches 165°F (74°C) in the thickest part.
- Remove from the oven and let the chicken rest for 5 minutes.
- Carefully remove the toothpicks, garnish with fresh thyme, and serve warm.
Notes
Honeycrisp, Granny Smith, or Pink Lady apples work especially well.
Slice the apples thinly so they soften while the chicken cooks.
Don't overfill the chicken because the Brie will melt during baking.
Secure the chicken with toothpicks to help keep the filling inside.
Some Brie may melt out during cooking, which is completely normal.
Always check the thickest part of the chicken with a meat thermometer and cook to 165°F.
Resting the chicken for 5 minutes helps keep it juicy.
